Ovens vary in temperature and meat cuts vary by weight and size.
Expert meat cookery requires correct measurement of internal temperatures. Only an accurate meat thermometer gives you the proper amount of roasting time regardless of size of meat cut.
Thermometer should be inserted into thickest part of meat to a point where the tip is 3/4″ past the center of the roast, but not in contact with bone, fat or gristle.
When desired meat temperatures is reached, remove roast from oven. Allow to stand five to ten minutes before carving.
